A warm, velvety blend of cauliflower, carrots, butternut squash, and aromatics, this Golden Glow Curry Soup is pure comfort in a bowl. Infused with ginger, garlic, and creamy coconut milk, it delivers a gentle anti-inflammatory boost while feeling indulgent and deeply satisfying. Ingredients

  • 1 onion, medium sized, diced
  • 1 TB coconut oil
  • 3 cubes frozen ginger (Doret brand) (or 3 tsp grated fresh ginger)
  • 3 cubes frozen garlic (Doret brand) (or 3 tsp/ 3 garlic cloves minced)
  • 2 cups cauliflower florets, chopped
  • 3 carrots, chopped (about 1 ½ cups)
  • 1 TB curry powder
  • 1 cup butternut squash cubes
  • 4 cups broth (vegetable, or chicken bone broth for added protein)
  • 2 tsp Sea Salt (like Jacobsen’s)
  • Black pepper to taste
  • 1 cup full fat coconut milk (like Native Forest Simple)
  • 1 lime, juiced
  • Optional toppers: Toasted pumpkin seeds, hemp seeds, chopped chives, sliced green onions, chopped cilantro, chopped basil

Instructions

  1. Sauté the onions in the coconut oil until golden brown. Add the ginger and garlic, and sauté until cubes are melted.
  2. Add cauliflower, carrots and curry powder. Sauté until fragrant, about 2 minutes.
  3. Add broth, squash, season with salt and bring to a simmer. Simmer uncovered for about 15-20 minutes, stirring periodically, until all veggies are tender.
  4. Let the soup cool slightly and then purée the soup by transferring to a blender or using an immersion blender. DO NOT try to blend the soup in a blender when it is very hot. Return the soup to the pan if using the blender method.
  5. Add the coconut milk and lime juice, stirring until well blended. Serve and top with a sprinkle of toasted pumpkin seeds, chopped chives and/or cilantro, as desired.
